De Nigris

De Nigris has made vinegar in Modena since 1889, and the golden eagle sits on its label. Its balsamic carries the Aceto Balsamico di Modena I.G.P mark, meaning the vinegar was produced and controlled inside the Modena and Emilia-Romagna area.

Two guides are printed on every label: the concentrated grape must shown as filled droplets, and the taste written out as Fresh & Zesty or Bold & Fruity. Those two marks tell the buyer which bottle belongs on a cold salad and which on a hot dish.

Formats run from a 500 ml bottle and a 250 ml spray up to a one-litre bottle and a five-litre catering jug. A 500 ml rice vinegar at 5% acidity for sushi and salads sits in the same range.
